Made this for Easter and it was delcious....  A little pricey though..

Fisrt ya need a good size walleye... fillet and skin the fish removing the mudline.

In the thickest part of the fillet cut fillet into 4in. chunk.  Using a sharp fillet knife cut down the center and horizontal of the chunk to form a  pocket in the fillet..

Now the fun part.  In alot of butter sautee, shrimp, scallops, and crab meat.  Season with garlic salt and Tonny Chatter seasoning or any of your favorite's.  When just undercooked add seasoned bread crumbs to make an almost stuffing consistancy..

cool this mixture in the fridge for about an hour until firm then stuff the pocket's of the fillet with the mixture (if you haven't ate it all yet)    Place stuffed fillet's in baking dish and add a pat of butter and more of your favorite seasonings on stuffed fillet's  Bake on 350 until they almost break apart when you lift a corner... Now your talking some fine eat's you could serve ANYWHERE and watch them dissappear
