If anyone has any extra salmon, I'll take a couple (or 3-4) off your hands. Need to have my brother smoke up some more! Finishing up the last batch as I type this . He will gladly smoke some for those that donate to the cause as well...
I KNEW you should have went with us, could have had a bushel basket full. I'll get some over. I always skin mine, okay with the chief smoker? Just need to air-dry it when you take it out of the brine, let a little "skin" form on the filets before smoking. Another thing that I have been dong the lst few years is canning the salmon, after it is smoked. So good it is crazy, and keeps so well, at least until somebody gets the urge to open a pint. Actually firms up the smoked salmon, just the opposite you would think pressure cooking would do.
Thanks Frank! Kenneth also skins it before smoking, so that should be fine. Do you need anything that I can trade you for the salmon? Think about it and let me know... I didn't get that much back from Kenneth after he smoked those two you guys dropped of. I think he kept way too much for a "smoking fee"!!!
