This one takes time but it is sooooo worth it.
Marinate venison hind in enough water to cover then add enough kosher salt to float an egg. Now add some garlic, a few onion, worshire sauce, any season you like. Marinate for at least 24 hrs. More time wont hurt. Wrap the whole thing in woven bacon. Hold in place with toothpicks. Get ur smoke up to around 200 for at least 4 hrs. More time for medium well. It will melt just like prime rib. Was gunna take some pics of cut up steaks but itdidnt last.
