Trying to shed some of my winter fat, and trying to appease my healthy eating wife, I found IMO, the perfect Oven fried fish fry!!! Even surprise me and took care of my fried fish fix!!!
Turn oven to 500 degrees and preheat
line cookie sheet with foil and spray with any cooking oil.
take any specie filets and and pat dry with paper towels.
Season some AP flour with your favorite seasoning and shake dried filets in brown paper bag with seasoned flour to just lightly coat and remove filets and shake off any excess.
beat two or three egg whites till frothy in a bowl and have another bowl with your favorite bread crumbs standing by at the ready.
dip filets in egg whites and then lightly coat with bread crumbs. More is not better.
lay filets on cookie sheet and spray coated filets with cooking spray Lightly
Place pan on high rack ( at least top 1/3) in oven and cook till golden . Probably 10 minutes depending on oven.
You'll swear it was fried And clean up is a breeze!!! Let me know what ya think. This might be my new goto!!!
Have tried it on Burbot and Walleye and is great on both!!!
